Mashed Potatoes

These go great with almost any meal!

Number of Servings: 2 (to make more, simply add one potato for every additional person)

Ingredients:

3 medium baking potatoes 
Salt, to taste
Milk, to taste
Butter (optional)

Directions:

1. Peel each potato and cut into medium-size chunks.

2. Rinse potatoes and place into a saucepan of lightly salted water (water should cover the tops of the potatoes)

3. Bring water to a boil. Lower heat to rolling boil and allow to cook for 10-20 minutes or until potatoes are tender (you can easily poke them with a fork). 

4. Drain potatoes and put into bowl. Using a hand mixer or potato masher, begin to mash potatoes. Add a splash of milk and, if you would like, a little butter (to taste). Continue to mix until potatoes develop a smooth consistency.

Notes:
  • Once you have the basic recipe, you can change it up a lot. Add bacon pieces and cheddar cheese. Or garlic. Or sour cream. Or food coloring. Whatever you want.
  • Have leftovers? Make "potato pancakes" by making small, flat cakes out of the potatoes and frying them. Crispy on the outside, warm potato on the inside.
