Ingredients:
2 boneless, skinless chicken breasts
Olive Oil
1.5 cups Italian Style Bread Crumbs
1.5 cups Flour
2 eggs
1 jar marinara sauce
sprinkle of parmesan cheese
6 mozzarella cheese slices
1 box spaghetti (I like thick spaghetti for this recipe, buy whatever you like)
Directions:
1. Preheat oven to 350 degrees
2. In a saucepan, heat spaghetti sauce until beginning to boil. Reduce to a simmer. In another pot, begin to heat water for spaghetti.
3. Slice chicken breasts in half, longways. Pound each piece flat.
4. Place breadcrumbs in a bowl with a sprinkling parmesan cheese. In a second bowl, whisk together the eggs. In a third bowl, place the flour.
5. In a pan, heat a few tablespoons of olive oil. Coat chicken breast in flour, followed by egg, followed by Italian Bread Crumb mixture and place in hot pan. Repeat with remaining chicken breasts. Cook chicken breasts until golden-brown on each side (do not have to be completely cooked)
6. Pour half the tomato sauce into a baking pan. Place chicken breasts in pan and cover each chicken breast with 1.5 slices of mozzarella cheese. Pour remaining sauce over chicken breasts.
7. Bake in oven for 25-30 minutes or until chicken is cooked all the way through. While baking, cook the spaghetti according to package directions.
8. Serve the chicken over the spaghetti!
Notes:
- If you like a less breaded chicken breast, omit the flour when preparing the chicken.
