Well, easy blackened chicken. This chicken can be used for sandwiches, chicken alfredo, a spicy chicken salad or anything else you can think of!
Serves: 4
Ingredients:
3 boneless, skinless chicken breasts with any extra fat trimmed off
2 TBSP McCormick Montreal Steak Seasoning
1 TBSP Red (Cayenne) Pepper
2-3 TBSP Olive Oil
Directions:
1. Put olive oil in frying pan (enough to coat pan) and heat over medium-high heat.
2. While olive oil is heating, prepare chicken by sprinkling Steak Seasoning and pepper over one side of each chicken breast. This should be done to taste but not overdone; the more pepper you add, the spicier your chicken will be.
3. Place chicken breasts into pan, spice side down. Allow to cook for 10-15 seconds and then flip to the other side.
4. You can complete cooking the chicken in the pan (flipping once and, to cook more quickly, covering with a lid) or you can put the chicken in an oven-safe dish and cook for 25-30 minutes at 350 degrees.
Notes:
The chicken is really tasty on a toasted Kaiser roll with mayo, onions, tomatoes, and avocado.
