Serves: 4
Ingredients:
1 T. Vegetable Oil.
1 medium yellow onion, chopped.
2 tsp. dry mustard
2 (15-oz) cans pinto beans, rinsed and drained
1/2 c. your favorite tangy barbecue sauce
2 tsp. red wine or cider vinegar
2 T. molasses
Directions:
1. Preheat oven to 350 degrees F
2. Heat a small, heavy, oven-proof pot with a lid over medium high heat. Add the oil, onion and mustard powder, and cook, stirring occasionally, until onions are translucent (about 6 minutes)
3. Add the beans, barbecue sauce, vinegar and molasses, plus 1/2 cup water, and stir gently to combine.
4. Cover and bake for 50 minutes at 350 degrees F.
Notes:
I like to use combinations of BBQ sauce to see what sorts of flavors the beans can have. Also, these beans are almost always better the next day.
